How would people know next year's events already, if Nats haven't even happened yet? :?:
Because we generally forecast a couple years out and the rules committees are actively finalizing next years events as we speak.

The Summer Institute is like a conference for coaches to learn about the events and techniques. (I may be wrong).

I guess so. I am not a coach.
Anyways, coaches have to register so not all cpaches go.

Anyway, what's the difference between Gravity and Mousetrap? Is Gravity harder of something?
First, you have to build a ramp. Then you have to build the vehicle. Then you have to make a brake.
Well, Gravity Vehicle is an event where the only force pushing the vehicle is the gravity. No mousetraps or anything.
And you have to make it stop near the designated point (braking system)
It is more complicated than that, so please correct me if I'm wrong. Check the Wiki for more info.
