I was referring to the lab procedure where you can find the caloric value of a food, like a peanut. You ignite and burn the food, using the heat generated to warm a container of water. One calorie is the amount of energy required to raise 1 g of H2O 1 degree C. There are different ways to do this. Some result in major heat loss, so you get a lower calorie result than reality. A bomb calorimeter is most accurate. We don't use open flames at our school, so I was worried that we might have to at state.
