Saturated lipids are simple hydrocarbon chains, with CH2 groups the entire length of the chain (occasionally a CH3 group). Unsaturated have a double bond "kink" in them, making them have less hydrogen. In membranes, the frequency of these determine the phase transition temperature, with more unsaturated lipids creating a more fluid, less stable, lower phase transition temperature.
