I would highly recommend not modding sevos for this purpose. Its just a waste of money. Unless your team happens to have a lot of money laying around (which I doubt), don't do it. Buy potentiometers from radioshack or check the storage rooms at school (I happen to have found electronic supplies from back when our school had a circuit class or something). I agree that turning each knob individually would not be time effective so use some sort of plastic or wood (plexiglass might be perfect) and arrange the potentiometers into a configuration by attaching them to each other so it mimics the movements of the slave arm.
