I notice that the rules say that the equipment must be put in a lab kit. Does that mean that I can't bring my materials in a box or other container?

A box should be fine. Notice that the term "Lab kit" is not defined narrowly. A box of around 2 ft by 1 from by ~8 inches deep (or possibly less) should work fine.

I am a member of Kealing Science Olympiad (in Texas). I am starting a test swap with other teams (NOT IN TEXAS). You should probably look at oil spill maps and such, the effects of toxins in specific areas, and how easy/ hard it is to keep toxins from spreading

The only lab you really need to prep for is chromatography...the rest should be simple enough

You can always try mixing different candies with water and making observations such as color, ph, physical or chemical changes etc.
