I remember for Elev Bridge that I used medium CA, which worked very well, and thin CA, which just got everywhere (bridge, fingers, jig, etc.). Of course, I wasn't using an applicator like most people here do, but thin CA is still a little too liquid for me.

If you are getting glue on your fingers you are using WAY to much glue. Typical when gluing straight from the bottle. You only need a tiny amount (see other posters comment about gluing 10 joints with a single drop!!) at each joint between the pieces for full strength on a properly made joint. Properly made joint. As large a surface as practical, and as TIGHT as possible. NO gaps, it may be called gap filling glue, but it isn't effective and its HEAVY when done that way. Oh, and in needs to be clean and free of any dust or grease (make sure your hands are clean).
Personally I like thin CA. I use an applicator as already described and with a tight, pre-assembled joint it just wicks into the almost non-existent gap, filling it and gluing things securely.
