The shape of the granules, and the taste. Salt is mainly cubic, and sugar looks a bit like a fallen column. Of course sugar is sweet, and salt is, well, salty.

I think wool has a stronger odor than that of silk, although they are similar. Also, silk stops burning once you take it out of the flame but wool may continue for a bit.
